Yummy Garden Egg Sauce...

For today's post, I would share a simple garden egg sauce recipe that can be used to eat rice, spaghetti, macaroni, yam and other foods. A lot of Nigerians actually use garden sauce for yam only and I would just say that they are missing out on so many things.

I always enjoyed the garden egg sauce since I was a kid and my mom always made the sauce so perfect that I always asked for me. So, I made this sauce for rice and decided to share how it's done.


Ingredients

  • 9 small garden eggs.
  • 3 Carrots.
  • 1 Onion
  • 150ml of blended pepper
  • 200ml of Red oil
  • ½ teaspoon of salt.

Let's get to the preparation.

  • I started by rinsing my garden eggs in clean water.

  • After cleaning them, I poured some water in a clean pot and put the garden egg.

While the garden egg was boiling, I went to process the other ingredients.

I rinsed the onions and carrots in clean water.

  • I went ahead to slice the carrot with a grater.

  • I sliced the onions with a knife as well.

By the time I finished, the garden eggs had cooked very well.

I removed them from the pot into a bowl.

  • I cut the top of the garden and cut into smaller sizes since I would blend them. (*You can pound it in a mortar if you have one.)

  • I turned the garden eggs into the blender and blended with a small quantity of water.

I moved on to the final stage of making my sauce.

  • I heated the pot and turned the palm oil into it.

  • The carrot went into the oil first and the onions followed.

  • I allowed them fry for about 3 minutes on low heat before adding the blended garden egg.

  • I added the pepper and ½ teaspoon of salt.

  • I stirred the the combination and allow it to fry for about 10 minutes under low heat. I love it dry while the red oil get very visible.

After the sauce was ready, i served it with rice and really enjoyed myself.
