Instructions

1- Prepare Tomatoes:

  • Begin by finely dicing 2 ripe tomatoes, ensuring the pieces are small to facilitate quicker cooking.

2- Beat the Eggs:

  • In a small bowl, crack 4 eggs and beat them thoroughly until the yolk and white are well combined.

3- Cook Tomatoes:

  • Heat a Tefal non-stick frying pan on low flame.
  • Add the diced tomatoes, spreading them evenly with a spatula.
  • Cover and cook on low heat for 3 minutes to release their juices.

4- Tomato Base:

  • Uncover, stir gently, then cover again.
  • Continue to cook for a total of 10 minutes until the tomatoes have softened significantly.

5- Add Seasonings:

  • Stir in 1/4 teaspoon each of KDD Tomato Paste and turmeric.
  • Drizzle olive oil or preferred alternative oil.
  • Season with salt and black pepper.

6- Combine Ingredients:

  • Mix thoroughly, ensuring the spices and tomato paste integrate well with the softened tomatoes, resulting in a rich base.

7- Incorporate Eggs:

  • Pour the beaten eggs into the pan, maintaining low heat.
