Ingredients

🍅 1/4 teaspoon KDD Tomato Paste
🌿 1/4 teaspoon turmeric powder
🫒 Olive oil use as needed or desired substitute with corn or sunflower oil
🧂 Salt use as needed or desired
🌶️ Black pepper use as needed or desired
Instructions
1- Prepare Tomatoes:
- Begin by finely dicing 2 ripe tomatoes, ensuring the pieces are small to facilitate quicker cooking.
2- Beat the Eggs:
- In a small bowl, crack 4 eggs and beat them thoroughly until the yolk and white are well combined.
3- Cook Tomatoes:
- Heat a Tefal non-stick frying pan on low flame.
- Add the diced tomatoes, spreading them evenly with a spatula.
- Cover and cook on low heat for 3 minutes to release their juices.
4- Tomato Base:
- Uncover, stir gently, then cover again.
- Continue to cook for a total of 10 minutes until the tomatoes have softened significantly.
5- Add Seasonings:
- Stir in 1/4 teaspoon each of KDD Tomato Paste and turmeric.
- Drizzle olive oil or preferred alternative oil.
- Season with salt and black pepper.
6- Combine Ingredients:
- Mix thoroughly, ensuring the spices and tomato paste integrate well with the softened tomatoes, resulting in a rich base.
7- Incorporate Eggs:
- Pour the beaten eggs into the pan, maintaining low heat.
- Continue stirring with the spatula, slowly integrating the eggs into the tomato mixture.
8- Finish Cooking:
- Stir continuously, ensuring the mixture remains moist.
