Ingredients
🌽 1 cup corn flour
💧 3 cups water
🍬 2.5 cups sugar
🌼 A pinch of saffron
🌹 1/2 cup rose water
🌶️ 1/4 tsp red food colour
🌿 1 tsp cardamom powder
🌻 1/4 cup sunflower oil or ghee
🧈 2-3 tsp ghee
🥜 1/2 cup chopped cashew nuts, 1/4 cup mixed, 1/4 cup for garnish
🟢 1/2 cup chopped pistachios, 1/4 cup mixed, 1/4 cup for garnish
🌰 1/2 cup chopped almonds, 1/4 cup mixed, 1/4 cup for garnish
Instructions
1- Prepare the Saffron Mixture:
- In a bowl, blend together a pinch of saffron, 1/2 cup rose water, 1 tsp cardamom powder, 1/4 cup sunflower oil (or ghee), and 1/4 tsp red food colour.
- Stir well until everything is thoroughly mixed and vibrant in color.
- Set this mixture aside.
2- Prepare the Corn Flour Mixture:
- In a large bowl, add 1 cup of corn flour.
- Gradually pour in 3 cups of water while whisking continuously to create a smooth, lump-free mixture.
- Set aside.
3- Caramelize the Sugar:
- Heat a non-stick pot over medium heat and add 2.5 cups of sugar.
- Stir consistently with a spatula until the sugar dissolves completely and turns a light golden color.
4- Combine with Corn Flour Mixture:
- Gradually add the prepared corn flour mixture to the caramelized sugar, stirring continuously.
- Continue stirring until the mixture thickens and becomes translucent.
5- Add Saffron Mixture:
- Add the saffron mixture into the halwa base.
- Stir continuously and quickly to ensure even color distribution and achieve a deep, vibrant red hue.
6- Incorporate Ghee:
- Add 2-3 teaspoons of ghee to the halwa.
- Keep stirring until the ghee is fully absorbed and the halwa looks glossy and starts to pull away from the sides of the pot.
7- Add Nuts:
- Mix in 1/4 cup each of chopped cashew nuts, pistachios, and almonds.
- Stir well until the nuts are evenly distributed.
- Continue cooking and stirring for a few more minutes until the halwa reaches a thick, shiny consistency.
8- Serve:
- Pour the hot halwa into a clear glass serving dish.
- Garnish generously with the remaining chopped nuts.
- Enjoy it warm or at room temperature.
