Hello from Thailand, friends! 🌸 Today, I’d love to share a delicious Pork Ribs Stir-Fried with Curry Paste recipe. It’s super simple to make, but requires a bit of time to achieve that melt-in-your-mouth tenderness. The slow cooking lets the ribs soak up all the rich, aromatic flavors of the curry paste, perfect for a relaxed meal when you’re not in a hurry. Trust me, the result is absolutely worth it!

Ingredients
- Pork ribs 500 grams
- 1 tablespoon of red curry paste
- Shrimp paste 1/2 tablespoon
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 2 bunches of young peppercorns
- 1 red chili
- 5 kaffir lime leaves
Procedure
Starting with preparing the pork ribs
Here’s how to prepare pork ribs before cooking (to ensure good flavor and food safety). I’ll start by rinsing the pork ribs with cold water to remove any blood residue or small bone fragments (if they don’t come off easily, you can use a brush to scrub them). Then, I’ll wash the ribs with cold water mixed with salt to eliminate any unpleasant odor, and finally, rinse them again with cold water.
This process helps ensure the ribs are clean and ready for cooking, resulting in a better flavor and food safety.
Then, boil the pork ribs. It takes me 1 hour (if using a stew pot or a pressure cooker, it will take less time)
- The other three ingredients I’ve prepared are young peppercorns, red chilies, and kaffir lime leaves. First, I wash them all, then prepare them into small pieces. I’ll cut the young peppercorns into short sections, slice the red chilies diagonally, and tear the kaffir lime leaves into tiny pieces just like you see in the picture, friends!
- When the pork ribs are tender and the liquid has reduced, I transfer them to a pan over medium heat. Then, I add the spicy curry paste and shrimp paste, stirring well to coat the ribs. Cover the pan and let it cook for about 10 minutes, allowing the flavors to soak into the meat. Season with fish sauce and sugar. Finally, add young peppercorns, red chilies, and kaffir lime leaves, tossing everything together. Turn off the heat.
