Cassava Bread


Cassava bread is a type of bread made with instant yeast mixed with steamed cassava, which is then blended until smooth. The soft cassava dough is then combined with bread flour dough. To create an appealing and aromatic effect, bright pandan coloring is added.

Cassava is one of the main ingredients in making this baked bread. Who would have thought that simple cassava could be transformed into unique bread with an extraordinary taste? The pandan aroma that I created from pandan paste, combined with generous amounts of chocolate spread, makes it even more delicious.

This recipe itself was inspired by a bread recipe that I saw on social media some time ago. I can't remember which social media platform it was, but this recipe is truly unique with its distinctive braided bread that blooms perfectly. Ingredients Required

250 grams high protein flour
1 egg
100 grams cassava
30 grams granulated sugar
5 grams instant yeast
10 grams powdered milk
½ teaspoon pandan paste
40 grams margarine
½ teaspoon salt
Chocolate and granulated coconut dry for topping




Making Procedure


I let the boiled cassava cool, then I pureed it using four tablespoons of water. Blend until completely smooth and soft.

Mix the all-purpose flour, granulated sugar, and milk powder.

Then add just the egg yolks, then add the instant yeast and stir until evenly combined.

Then add the mashed cassava, margarine, and salt, and knead the dough.

Knead until well combined, then add the pandan paste and knead again.

When finished, let the dough rest for about 20 to 30 minutes in a lukewarm oven covered with a cloth.

Once it has doubled in size, flatten it and add chocolate toppings and dried shredded coconut.

Then, roll it up lengthwise, cut the dough into 3 pieces, and braid them as desired.

Place them in a baking pan, let them rise for another 20 minutes, then bake in a preheated oven at 200°C using both top and bottom heat.

The result was beautiful. The bread rose well, even though I was very skeptical at first. However, when I left the bread in the oven covered with a cloth, it rose twice as big as I had expected. And when the bread was baked, the result was perfect. I was thrilled to serve this beautiful bread to my family, especially my mother, who doesn't like chocolate, but because of this cassava bread, she enjoyed it with a satisfied smile.

Everything tastes so good, from the soft texture of the bread to the sweetness of the chocolate. I am very happy that this dish is so perfect. Especially when enjoyed with family, they will definitely love it.
