Aceh Pidie Tipical Long Bean Recipe

Gongseng coconut is one of Aceh's signature spices that is a must when preparing traditional dishes. Usually, gongseng coconut is added to curry spices or non-vegan dishes. It is used in spiced dishes such as meat, chicken, duck, and many other types of dishes.
This time, however, roasted coconut is prepared in a vegetable dish. And this is the first time I've tried it myself at home. Usually, I enjoy this dish when I visit my parents' hometown.
Stir-fried Long Beans with Toasted Coconut

This dish is a traditional dish made from chopped long beans and cooked with the addition of toasted coconut. The toasted coconut is then mixed with other ingredients and served with white rice. This dish itself is a traditional dish from Aceh Pidie, where it is very popular.
Ingredients

1 tablespoon of roasted coconut
3 red chilies
2 green chilies
4 cloves of shallots
1 clove of garlic
1 candlenut
Procedure
Cut the long beans lengthwise into 3 to 4 cm pieces, or according to your preference.




Blend the shallots, garlic, cayenne pepper, and candlenuts until smooth.


Then chop the tomatoes and thinly slice the red and green chilies and one clove of garlic.


Sauté the chopped chili peppers and onions, then add the blended spices and sauté with enough cooking oil.


Add the tomatoes and toasted coconut, stir until evenly mixed, and don't forget to add a little water.

Finally, add the long beans and cook until done. The long beans should be perfectly tender.


Result

The result is beautiful and definitely delicious. I usually enjoy this with warm white rice. The combination of all the ingredients is so tempting, just like my mother's cooking, which I love. Even my husband, who had never tried this recipe before, said it was very special.


The natural sweet and savory flavors of the long beans are just right. Added to that is the distinctive aroma of roasted coconut with a very savory taste. This dish is perfect as a side dish for family lunches and is best enjoyed with warm rice.
