🌶️ 4 guajillo chiles

🐷 250 g pork rinds

🟢 6 cooked tomatillos
🟩 1 cup green mole paste
🌿 1/4 bunch cilantro
🍗 3 cups chicken broth
🌰 1 cup toasted pumpkin seeds
🐔 Cooked shredded chicken breast

🥄 Vegetable oil
🧅 1/4 cup sliced onion
🌭 1 cup sliced sausage
🥩 2 cups diced smoked chops
🌶️ 1/4 cup sliced serrano chile
🍅 1 cup diced tomato
🧂 Salt
🧂 Pepper

Instructions

1- Blend Ingredients for Salsa Roja:

• Place roasted tomatoes, jalapeño peppers, guajillo chiles, roasted garlic, roasted onion, and chicken broth into the Vitamix blender.
• Add salt and pepper.
• Blend until smooth.

2- Cook Salsa Roja:

• Heat vegetable oil in a green ceramic pot.
• Pour the blended sauce into the pot and simmer for 5 minutes.
• Stir in pork rinds and diced potatoes.
• Cook for another 20 minutes.

3- Blend Ingredients for Mole Verde:

• In the Vitamix blender, combine spinach, cooked tomatillos, mole paste, cilantro, chicken broth, and toasted pumpkin seeds.
• Season with salt and pepper.
• Blend until smooth.

4- Cook Mole Verde:

• Heat vegetable oil in a grey non-stick pot.
• Pour in the blended mole and add shredded chicken.
• Cook for 20 minutes.

5- Cook Sausage and Smoked Pork Chop Filling:

• Heat vegetable oil in a black non-stick pan.
• Add onion and stir-fry for 3 minutes.
• Mix in sliced sausage and cook until browned.
• Stir in diced smoked chops, cooking for 5 minutes.
• Add serrano chile, tomatoes, salt, and pepper.
• Cook for 15 minutes.
