Instructions

1- Blend Ingredients for Salsa Roja:

  • Place roasted tomatoes, jalapeño peppers, guajillo chiles, roasted garlic, roasted onion, and chicken broth into the Vitamix blender.
  • Add salt and pepper.
  • Blend until smooth.

2- Cook Salsa Roja:

  • Heat vegetable oil in a green ceramic pot.
  • Pour the blended sauce into the pot and simmer for 5 minutes.
  • Stir in pork rinds and diced potatoes.
  • Cook for another 20 minutes.

3- Blend Ingredients for Mole Verde:

  • In the Vitamix blender, combine spinach, cooked tomatillos, mole paste, cilantro, chicken broth, and toasted pumpkin seeds.
  • Season with salt and pepper.
  • Blend until smooth.

4- Cook Mole Verde:

  • Heat vegetable oil in a grey non-stick pot.
