🥩 2 cups diced smoked chops

Instructions
1- Blend Ingredients for Salsa Roja:
- Place roasted tomatoes, jalapeño peppers, guajillo chiles, roasted garlic, roasted onion, and chicken broth into the Vitamix blender.
- Add salt and pepper.
- Blend until smooth.
2- Cook Salsa Roja:
- Heat vegetable oil in a green ceramic pot.
- Pour the blended sauce into the pot and simmer for 5 minutes.
- Stir in pork rinds and diced potatoes.
- Cook for another 20 minutes.
3- Blend Ingredients for Mole Verde:
- In the Vitamix blender, combine spinach, cooked tomatillos, mole paste, cilantro, chicken broth, and toasted pumpkin seeds.
- Season with salt and pepper.
- Blend until smooth.
4- Cook Mole Verde:
- Heat vegetable oil in a grey non-stick pot.
- Pour in the blended mole and add shredded chicken.
- Cook for 20 minutes.
5- Cook Sausage and Smoked Pork Chop Filling:
- Heat vegetable oil in a black non-stick pan.
- Add onion and stir-fry for 3 minutes.
- Mix in sliced sausage and cook until browned.
- Stir in diced smoked chops, cooking for 5 minutes.
- Add serrano chile, tomatoes, salt, and pepper.
- Cook for 15 minutes.
