Sri Lankan creamy Pumpkin curry is a comforting and flavorful dish that perfectly blends the natural sweetness of Pumpkin with the rich, creamy texture of coconut milk. Materials Used.
Pumpkin 400g .
Some washed pumpkin seeds.
A finely chopped onion.
A little chopped garlic.
curry leaves.
A piece of cinnamon.
1 Teaspoon of pepper.
2 Tabespoon of Grated Coconut.
2 Tablespoon of rice.
1/2 Teaspoon of Mustard seed.
1 1/2 Cup of coconut milk.
1/2 Teaspoon of chili powder.
1 Teaspoon of curry powder.
1/2 Teaspoon of turmeric powder.
Salt to taste.
1/2 Teaspoon of Fenugreek seed.

The cooking process as follows.
Now let’s get ready to prepare the dish.
First, take the grated coconut and lightly toast it, then set it aside. Next, take a grinding stone (or mortar and pestle) and add the toasted coconut along with salt, raw rice, garlic, curry leaves, pandan leaves, cinnamon, fennel seeds, mustard seeds, and pumpkin seeds. Grind everything together well until you form a smooth paste.
Next, add the prepared paste to 1/2 cup of coconut milk. Mix it well until combined.
Next, place the washed and chopped Pumpkin pieces into a pot. Add the spices, green chilies, and a cup of coconut milk Mix everything well.
Next, place it on the stove and let it cook for about 5 minutes. After that, add the coconut milk mixture we prepared with the paste, and cook for another 2 minutes. Then remove it from the stove.
