Ingredients
For the Dough:
π 460 g all-purpose flour
β³ 6 g baking powder

π§ 25 g unsalted butter
π§ 275 ml lukewarm water
Extras:
π½ 30 g cheese-flavored nachos finely ground
π» Sunflower oil approx. 25 ml for kneading + 15 ml per piece of dough
For the Chicken Mixture:
π 700 g chicken thighs
π§ 4.5 g salt β
tsp
πΆοΈ 3 g cayenne powder 1 tsp

4 g onion powder 1 β
tsp
π§ 3 g garlic powder 1 tsp
β« 2 g black pepper β
tsp
π« 25 ml olive oil
π― 20 g sweet soy sauce ketjap manis
πΆοΈ 40 g hot chili sauce

Instructions
1- Dough Preparation:
- Finely grind 40 g of nachos in a food processor.
- In a large mixing bowl, combine the flour, baking powder, salt, and ground nachos.
- Add honey, butter, and lukewarm water to the mix.
- Knead the dough for 10β12 minutes until it is smooth.
- Cover dough with a damp cloth and let it rest for 30 minutes.
- Divide the dough into 8 equal portions (approximately 100 g each) and shape them into balls.
- Grease your hands and work surface with sunflower oil (around 25 ml).
- Flatten each dough ball.
- Cover again and let them rest for an additional 30 minutes.
- Grease the work surface again using about 15 ml of oil per piece.
- Place a dough ball on the surface and stretch it with your fingertips into a round sheet about 30 cm in diameter, greasing your hands to prevent tearing.
- Sprinkle some of the nacho crumbs over the flattened dough.
- Fold the top and bottom edges toward the center to form a rectangle. Fold the sides inward to form a square.
- Lightly press it into a 20 cm square.
- Fold the right and left sides again toward the center to form a rectangle.
- Lightly press the dough again.
- Place on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 200 Β°C (392 Β°F) for 20β25 minutes until golden brown.
2- Chicken Preparation:
- Clean the chicken thighs and cut them into small cubes.
- Season the chicken with salt, cayenne powder, onion powder, garlic powder, black pepper, and olive oil, then mix well.
- Heat a deep frying pan over medium heat.
- Cook the chicken mixture for 4β5 minutes in the pan.
- Add the sweet soy sauce and hot chili sauce, continuing to cook for another 2β3 minutes.
- Remove from heat and stir in the mayonnaise, mixing until it achieves a creamy consistency.
3- Assembly:
- Serve warm bread with the creamy chicken mixture, topped with extra nachos and lettuce.
