Ingredients
🌶️ 5 Chiles California
🌶️ 10 Chiles Guajillos
🌶️ 5 Chiles Ancho
🥩 4 kg Beef from a whole beef leg with fat
🐐 2 Goat heads
🧅 2 Small white onions 1.5 for cooking meat, 0.5 for chili paste
🧄 1 Large garlic head 1 head for cooking meat, 8 cloves for chili paste
🍅 4 Tomatoes halved
🌿 40 g Toasted sesame seeds
🌶️ Reserved Chile seeds
🌿 Max Select Mixed Spices: 1 packet 40 g
💧 Water sufficient for cooking
🧂 Salt
🍺 1 can Tecate Original Lager Beer 520 ml
🥣 Beef Consommé or Chicken Consommé
🍋 Limes for serving
🌿 Fresh cilantro chopped for serving
🧅 White onion chopped for serving
🌶️ Radishes for serving
🌶️ Salsa de chile de árbol super spicy for serving
Instructions
1- Prepare Chiles:
- Remove stems and seeds from California, Guajillo, and Ancho chiles.
- Reserve the seeds for toasting.
2- Prepare Meat:
- In a large pot, place 2 goat heads at the bottom.
- Add 4 kg of beef, including fatty pieces.
- Cover with water.
3- Add Aromatics to Meat:
- Add 1.5 small onions cut in half to the pot with the meat.
- Add 1 large garlic head to the pot with the meat.
4- Boil Chili Paste Ingredients:
- In a separate pot, add chiles, halved tomatoes, 0.5 onion, and 8 garlic cloves.
- Cover with water and boil until soft over the wood fire.
5- Toast Seeds:
- Toast the reserved chile seeds and sesame seeds in a pan until aromatic.
6- Cook Meat (Initial Phase):
- Place the pot with meat over the custom-made wood-fire stand.
- Ignite the wood with a torch and start cooking.
7- Skim Impurities:
- As the meat cooks, skim off any foam and impurities from the surface.
8- Season Meat (Initial):
- Add salt gradually once foaming subsides.
9- Blend Chili Paste:
- Transfer softened chiles, tomatoes, onion, and garlic to the Vitamix blender.
- Add Max Select Mixed Spices, toasted seeds, and some cooking water.
- Blend until smooth.
10- Add Sauce to Meat:
- Pour blended chili paste into the pot with meat and stir.
11- Add Beer:
- After the sauce and meat have simmered for some time, add 1 can of Tecate Original Lager beer and stir.
12- Final Seasoning:
- Cook until the meat is tender.
- Adjust seasoning with beef or chicken consommé if needed.
13- Rest:
- Allow the birria to rest briefly before serving.
