I've also been updating my skills and receiving professional support related to this craft. For bread lovers, here's a recipe for rustic wholemeal bread. It's a delicious homemade bread made with lots of love.

All the techniques for baking bread at home are interesting. For example, in this dough, I made the ferment with sugar, flour, water, and yeast. There are so many ways to learn, and I love that. I'll show you how I made these delicious mini bread small.

INGREDIENTS - 1 kilo of wholemeal flour - 20 grams of dry granulated yeast - 30 grams sugar, can be substituted with a tablespoon of honey - 20 grams salt - 30 grams butter, can be substituted with olive oil - 640 ml lukewarm water - Sesame seeds - Extra flour for kneading - Oil and pastry brush. Begin to combine the ingredients little by little, add the water and butter, continue to mix the ingredients, and finally add the salt. ✓ Knead on the counter for five minutes to combine and integrate the ingredients until you have a smooth, manageable dough. Shape the dough into a ball. ✓ Cover and let rest for 20 minutes. Second kneading

✓ Knead for 20 minutes, stretch the dough, this is when you rub the dough, until you get a good gluten development. ✓ Shape into a ball and leave the dough to rest for at least an hour. Brush the dough with oil and cover it, storing it in a draught-free place. Degassing

Amo la cocina! y me encanta compartir la gran variedad de comida que podemos hacer, en estos días he estado refrescando mi memoria con recetas de panadería artesanal, también me he estado actualizando y recibiendo apoyo profesional relacionado a este oficio, para los amantes del pan aquí les muestro una receta de la elaboración rústica de pan integral, es un buen pan casero realizado con mucho amor.

Todas las técnicas para el horneado de pan en casa son interesantes, por ejemplo en este amasado hice el fermento con azúcar, harina, agua y levadura; hay tantas formas de aprender y eso me encanta, te muestro como hice estos pancitos que quedaron deliciosos.

INGREDIENTES - 1 kilo de harina integral - 20 gramos de levadura, granulada seca - 30 gramos de azúcar, se puede sustituir por una cucharada de miel - 20 gramos de sal - 30 gramos de manteca, se puede sustituir por aceite de oliva - 640 ml de agua tibia - Semillas de sésamo - Harina extra para amasar. - Aceite y brocha. Activación de la levadura,"Fermento"

✓ Utilizaremos 200 ml de agua tibia, el azúcar (los 30 gramos) y dos cucharadas de harina, se debe mezclar bien todo esto, y lo debemos dejar en reposo por diez minutos, en un lugar preferiblemente oscuro, sin corriente de aire. ✓ Si la levadura no ha fermentado lo suficiente en diez minutos, puede dejarla activarse unos cinco minutos más. Primer amasado corto

✓ Comenzamos colocando en un bowl la harina y agregamos la levadura, comenzamos a unir los ingredientes poco a poco, añadimos el agua y agregamos la manteca, seguimos integrando los ingredientes, por último le colocamos la sal. ✓ Amasamos ahora sobre el mesón por cinco minutos, es para unir e integrar los ingredientes hasta obtener una masa suave y manejable, boleamos un poquito y hacemos un bollo. ✓ Dejamos reposar tapado por 20 minutos. Segundo amasado

✓ Amasar por 20 minutos, estirar la masa, aquí es cuando se soba la masa, hasta obtener un buen desarrollo del gluten. ✓ Hacer un bollo y dejar la masa en reposo por una hora mínimo, a ésta masa le untamos aceite con la ayuda de la brocha, y la tapamos guardada en un lugar sin corriente de aire. Desgasificar

✓ Tomamos la masa y le sacamos el aire, luego comenzamos a formar bolitas de 70 gramos, las dejamos reposar por diez minutos tapadas. Hacer los panes

✓ Este es el momento más esperado por mi, aquí hacemos los panes, hay variedad de técnicas, yo hice una bastante fácil, con una bolita de masa hice un rectángulo, y luego lo he enrollado, también hago presión por los bordes para que queden más delgados. ✓ Las bandejas para hornear deben estar listas, previamente engrasadas. ✓ Los panes se untan con aceite, nos ayudamos con una brocha, tambien le colocamos semillas y se reposan por treinta minutos tapados. ✓ Debemos precalentar el horno, de diez a quince minutos. ✓ Antes de ingresar las bandejas al horno, a cada pan se les hace un corte, debe hacerse rápido y con seguridad, generalmente éste corte me sale un poco deforme, pero no importa, algún día lo haré bien. HORNEADO

✓ Se hornean, al principio a fuego alto (250 grados), luego a los diez minutos le podemos bajar la temperatura (180 grados). ✓ El horneado puede durar desde 20 a 30 minutos, todo dependerá del horno.

Utensilios para mejorar la calidad del producto: - Atomizador para rociar agua a los panes (rociar los panes con agua ayuda a obtener una mejor corteza). - Bandeja mediana con agua hirviendo: esto es para hacer vapor dentro del horno. Se utiliza al momento de hornear, cuando tenemos el horno al principio a fuego alto, en ese justo momento colocamos la bandeja con agua hirviendo en la parte de abajo del horno, esta bandeja la retiramos al pasar diez minutos, aprovechamos exactamente en el momento en que bajamos la temperatura del horno. - Hojilla para hacerle el corte al pan: es mejor utilizar un bisturí quirúrgico, una hojilla o una navaja de precisión (comúnmente llamado cutter exacto), creanme que el corte sale mucho mejor al utilizar algunos de estos instrumentos, porque si lo quiere hacer con los cuchillos de cocina, entonces estos deberán estar bien afilados.
