Ingredients
🐙 1 kg cleaned squid, cut into rings and pieces
🍤 1 kg cleaned shrimp
🐟 3 fillets white fish, e.g., Tilapia, Dogfish
🍋 1 lime for zest
🫑 1 green bell pepper, diced
🧅 1 medium onion, diced
🍅 2 chopped tomatoes
🧄 3-4 cloves minced garlic
🌿 Chopped chives, white part for sautéing, green part for garnish
🌿 Chopped parsley for garnish
🍲 500 ml fish or shrimp broth
🥥 1 cup 240 ml coconut milk
🫒 Olive oil or cooking oil for sautéing
🧂 Salt
🌶️ Black pepper
Instructions
1- Prepare the Seafood:
- Clean and cut the squid, shrimp, and fish fillets.
- Season each with salt, black pepper, and lime zest. Set aside.
2- Prepare the Aromatics:
- Dice the onion, green bell pepper, and tomatoes.
- Mince the garlic and chop the chives and parsley.
3- Start the Stew:
- In a large non-stick pan, heat olive oil.
- Sauté the diced onion until translucent. Add the bell pepper and tomatoes, cooking until softened.
- Add minced garlic and the white part of the chives. Continue to sauté until fragrant.
4- Build the Stew:
- Pour fish or shrimp broth into the pan. Bring to a gentle simmer.
- Add seasoned fish fillets into the broth. Let cook for about 2-3 minutes.
5- Layer the Seafood:
- Place shrimp on top of the fish in the broth. Cover the pan and cook for 2 minutes until shrimp turns pink/orange.
- Add squid pieces, cover, and cook for another 2 minutes or until they turn opaque white.
6- Finish with Coconut Milk:
- Uncover the pan and gently stir in 1 cup of coconut milk.
- Garnish with parsley and the green part of the chives. Stir gently to combine.
7- Serve:
- Serve hot, ideally with coconut rice for a complete experience.
