Hello dear Hiveians, yesterday I suddenly had a craving for rigatoni after watching a drool inducing reel video in my Instagram feed. In Germany there are so many Italian Imbiss (a simple diner) where you can enjoy delicious pasta and pizza at affordable prices but here you probably have to go to an expensive restaurant to enjoy an authentic taste of pasta 😜, so... I better just make it on my own. I didn't have ground beef in stock so bolognese sauce was out of question. However I happened to still have *Pecorino Romano, Parmigiano Reggiano* and Pancetta* in the fridge, so I guess *Rigatoni all'Amatriciana* could be a great idea. Normally I should have used "*guanciale*" (pork jowl), but I didn't have one either so *pancetta* was still a rather good substitute, so...our dinner menu was decided 😉.

Hallo liebe Hiveians, gestern bekam ich plötzlich Lust auf Rigatoni, nachdem ich ein Reel-Video in meinem Instagram-Feed gesehen hatte, das sofort Heißhunger auslöst. In Deutschland gibt es so viele italienische Imbisse (einfache Restaurants), wo man leckere Pasta und Pizza zu erschwinglichen Preisen genießen kann, aber hier muss man wahrscheinlich in ein teures Restaurant gehen, um einen authentischen Pastageschmack zu erleben 😜. Also... mache ich es lieber selbst. Ich hatte kein Hackfleisch vorrätig, also kam Bolognese-Sauce nicht infrage. Allerdings hatte ich noch *Pecorino Romano, Parmigiano Reggiano* und *Pancetta* im Kühlschrank, also dachte ich, *Rigatoni all'Amatriciana* wäre eine großartige Idee. Eigentlich hätte ich *Guanciale* (Schweinebacke) verwenden sollen, aber das hatte ich auch nicht – also war *Pancetta* immer noch ein ziemlich guter Ersatz. Damit war unser Abendessen entschieden 😉.

Before I started to cook I need to prep on these following ingredients (BTW I still write the original ingredients needed for this dish, just in case my readers wish to re-create the "original" taste and have the possibility to do so): - dry rigatoni enough for 4 portions (ca. 250-300g) - 125 g guanciale (as I mentioned above I substituted it with pancetta, cos it's easier to find here and I happened to have some ready) - 4 big tomatoes (unfortunately I didn't have San Marzano tomatoes available here either, so I had to use local tomatoes 😅. My pasta was still very tasty but only half original LOL) - 1 chili pepper (Little Kobold doesn't dare to eat spicy so again I had to replace this with a small red paprika 🙈) - 50 ml dry white wine (I don't collect wine at home, so I have to skip this too. - But it doesn't matter though, cos the original recipe said that it's optional anyway.) - 1 big onion, chopped - 80 g Pecorino Romano, grated - salt and pepper (Be careful with the amount of this ingredients, cos Pecorino Romano is already quite salty and if you use guanciale, it's also already quite savory! You might not really need an extra pepper for the pasta.) - chopped parsley for garnish OK...now let's start cooking 😉!

Bevor ich mit dem Kochen begann, musste ich folgende Zutaten vorbereiten (übrigens liste ich hier die originalen Zutaten auf, falls meine Leser den "originalen" Geschmack nachmachen wollen und die Möglichkeit dazu haben): - Trockene Rigatoni für 4 Portionen (ca. 250–300 g) - 125 g Guanciale (wie erwähnt, habe ich es durch Pancetta ersetzt, weil es hier leichter zu finden ist und ich noch welches hatte) - 4 große Tomaten (leider hatte ich keine San-Marzano-Tomaten hier, also musste ich auf lokale Tomaten zurückgreifen 😅. Meine Pasta war trotzdem lecker, aber nur halb original, LOL) - 1 Chili-Schote (Little Kobold traut sich nichts Scharfes zu essen, also habe ich sie durch eine kleine rote Paprika ersetzt 🙈) - 50 ml trockener Weißwein (Ich habe keinen Wein zu Hause, also musste ich ihn weglassen. Aber das ist nicht schlimm, denn im Originalrezept steht, dass er optional ist.) - 1 große Zwiebel, gehackt - 80 g Pecorino Romano, gerieben - Salz und Pfeffer (Vorsicht mit der Menge, denn Pecorino Romano ist schon ziemlich salzig, und wenn man Guanciale verwendet, ist es auch schon würzig! Vielleicht braucht man nicht einmal extra Pfeffer.) - Gehackte Petersilie zum Garnieren OK... jetzt fangen wir mit dem Kochen an 😉!

Add in pancetta and fry it for a few minutes until it's crispy brown. Stir in the chopped peeled tomatoes and chili/paprika. Squeeze and stir them all with wooden spoon until it's becoming a creamy sauce. Meanwhile cook the pasta with a pinch of salt until it's *al dente*. Follow the instructions in the package cos each brand has different consistency. If you're an experienced cook, just get one piece of pasta after about 5 minutes and pinch it with your finger to test it. I always do it (especially necessary if you're using local brand,because you can't really trust the instruction in the package anyhow. I learnt after a while that local brand turn soft and gets mushy really fast, so I always cut the time suggested by the producent, otherwise my pasta will be far too soft).

Pancetta dazugeben und einige Minuten anbraten, bis er knusprig braun ist. Die gehackten, geschälten Tomaten und Chili/Paprika unterrühren. Mit einem Holzlöffel alles zerdrücken und umrühren, bis eine cremige Sauce entsteht. Während die Sauce köchelt, Nudeln in Salzwasser al dente garen. Folge den Anweisungen auf der Verpackung, da jede Marke eine unterschiedliche Kochzeit hat. Wenn du erfahren bist, nimm einfach nach etwa 5 Minuten eine Nudel heraus und drücke sie mit den Fingern, um den Garpunkt zu testen. Ich mache das immer (besonders wichtig bei lokalen Marken, denn den Anweisungen auf der Packung kann man nicht wirklich trauen). Ich habe gelernt, dass lokale Marken schnell weich und matschig werden, deshalb reduziere ich immer die vom Hersteller angegebene Kochzeit – sonst werden meine Nudeln viel zu weich.

My first trial of Rigatoni all'Amatriciana was succesfull. Everybody enjoyed the dinner delightfully, it was so delicious 😋. In Tagaytay it's not easy to find original eurepean cheese and bacon, salami or other imported cured meat product from Eurepe. However I can order few of commonly popular stuff online through e-commerce platform and get it delivered from Manila. Cured meat and few kind of hard cheese is deliverable to Tagaytay cos the quality can still be maintained with a vaccuum sealed packaging and protection wrap for frozen goods. Normally it only takes a day to get it delivered. But sometimes I could go shopping to Lander's or S/R with my singaporean neighbour to the neighbouring city which only takes about 35-45 minutes by car. There we can find more imported stuff and get our wallet empty in one sitting LOL. Alright folks, that's all for today! Thanks for stopping by my blog - catch you next time! Happy cooking!

Mein erster Versuch mit Rigatoni all'Amatriciana war ein Erfolg. Alle haben das Essen genossen, es war so lecker! 😋 In Tagaytay ist es nicht einfach, original europäischen Käse, Speck, Salami oder andere importierte Wurstwaren aus Europa zu finden. Allerdings kann ich einige der gängigen Produkte online über E-Commerce-Plattformen bestellen und aus Manila liefern lassen. Geräucherte Fleischwaren und einige Sorten Hartkäse können nach Tagaytay geliefert werden, da die Qualität durch Vakuumverpackung und Schutzfolie für Tiefkühlware erhalten bleibt. Normalerweise dauert die Lieferung nur einen Tag. Manchmal fahre ich aber auch mit meinem singapurischen Nachbarn zum Einkaufen nach Lander's oder S/R in die Nachbarstadt - die Fahrt dauert nur etwa 35-45 Minuten mit dem Auto. Dort finden wir mehr Importprodukte und können bei einem einzigen Einkauf gleich unser ganzes Portemonnaie leeren, haha! Ok, das war's dann.
