Tacos Gobernador are a delightful culinary gem from Sinaloa, Mexico. These tacos are filled with a luscious blend of creamy shrimp and melted cheese, all encased in a golden, crispy tortilla. Ingredients
🌮 8 corn or wheat tortillas
🧈 25g butter
🍅 3 tomatoes, chopped
🧅 1/2 medium onion, chopped
🌿 A bunch of fresh cilantro, chopped
🍤 400g peeled shrimp
🧀 300g white cheese, Latino type, chopped
🧂 Salt
🍋 3-4 limes for garnish and squeezing
🌶️ Spicy red sauce for serving
Instructions
1- Prepare the Shrimp and Cheese Filling:
- In a Tefal stainless steel pot with a glass lid, melt 25g of butter over medium heat on a Samsung induction hob.
- Add the chopped tomatoes and half a chopped onion to the pot.
- Cover and simmer until the vegetables are cooked through and the liquid has evaporated to form a thick sauce.
- Add the shrimp and cook for approximately 2 minutes, stirring until they turn pink and opaque.
- Turn off the heat and immediately mix in the white cheese and chopped cilantro until the cheese is fully melted.
2- Prepare the Tortillas:
- Heat a frying pan (brand not visible) and place each tortilla in the dry pan for 5–10 seconds on each side to soften slightly. Set aside.
3- Assemble and Fry the Tacos:
- Place a spoonful of the shrimp and cheese filling on one half of a softened tortilla, then fold it.
- Lightly butter the outside of the taco.
- Place the taco in the frying pan and cook until golden brown and crispy on both sides.
