Instructions

1- Prepare the Dough:

  • In a bowl, combine all the ring ingredients except for the water.
  • Gradually add the warm water in parts, mixing continuously until you achieve a smooth, non-sticky dough. You may not need all the water.
  • Knead the dough until it's well incorporated, then wrap it in plastic and let it rest.

2- Make the Filling:

  • In a mixer, combine all the filling ingredients.
  • Mix thoroughly until you achieve a smooth batter with no lumps. Use a spatula to scrape down the sides of the bowl if needed.
  • If desired, add yellow food colorant for a vibrant look.

3- Shape the Rings:

  • Dust your work surface with flour, then roll out the dough to a rectangle about 0.5 cm thick.
  • Cut the rolled dough into strips about 2 cm wide and 20 cm long.
  • Wet one end of each strip with water and glue it to the other end to form a ring.

4- Assemble and Bake:

  • Place the rings onto a sheet pan lined with parchment paper.
  • Fill each ring about 3/4 full with the batter.
  • Bake in a preheated oven at 380°F (193°C) for about 20 minutes, or until the filling is fully baked and feels like a sponge.

5- Serving:

  • This recipe yields approximately 12 Ojos.
  • Allow them to cool slightly before serving.
