Manteconchas are a delightful combination of two beloved Mexican pastries: Mantecadas and Conchas. This recipe offers a unique twist by merging the fluffy, moist texture of Mantecadas with the sweet, decorative crust of Conchas. Ingredients

For the Batter (Mantecadas):
🥚 4 eggs
🍚 1 cup of granulated sugar

For the Decorating Paste:
🍞 1 1/4 cups all-purpose flour
🍬 3/4 cup powdered sugar
🧈 1/2 cup shortening
🥚 1 egg white
🍦 1 tablespoon vanilla extract


Instructions

1- Prepare the Decorating Paste:

  • In a mixer, combine all the ingredients for the decorating paste except for 1/2 cup of flour. Mix well, scraping the sides with a rubber spatula as needed.
  • Add the remaining flour and mix until the paste reaches a play-dough-like consistency—sticky but manageable.
  • Divide the paste into three portions and color each as desired. Set aside.

2- Make the Batter:

  • In the mixer, add all the ingredients for the batter. Mix until smooth and free of lumps.
  • Line cupcake pans with liners and pour the batter into them, filling 18 liners evenly.

3- Assemble and Bake:

  • Divide the colored decorating paste into 18 equal portions.
  • Flatten each portion between your fingers to form a disc, and place one over each cupcake batter.
  • Use a knife to gently score the top, creating the traditional concha pattern.
  • Preheat your oven to 350°F (175°C) and bake the manteconchas for 25 minutes. Check at 18 minutes to ensure even browning, rotating as needed.
