Ingredients

🥩 2 pounds flank or top round beef, thinly sliced
🌶️ 3 tablespoons habanero hot sauce (adjust to taste)
🍯 1/2 cup honey
🥄 1/4 cup soy sauce
🥃 1/4 cup Worcestershire sauce
🌾 1 tablespoon brown sugar
🧄 3 cloves garlic, minced
🧂 1 teaspoon salt
🧈 1 teaspoon ground black pepper
🌶️ 1 teaspoon crushed red pepper flakes (optional)

Instructions

1- Prepare the Beef:

  • Freeze the beef for about 1-2 hours until firm but not frozen. This helps in slicing it thinly.
  • Once ready, cut the beef into 1/4-inch thick slices against the grain.

2- Make the Marinade:

  • In a large mixing bowl, combine the habanero hot sauce, honey, soy sauce, Worcestershire sauce, brown sugar, minced garlic, salt, black pepper, and red pepper flakes (if using).
  • Mix well until the honey and sugar are fully dissolved.

3- Marinate the Beef:

  • Add the sliced beef to the marinade, ensuring each piece is well-coated.
  • Cover the bowl or transfer the beef and marinade to a ziplock bag.
  • Refrigerate for at least 6-24 hours, allowing the flavors to penetrate the beef.

4- Cooking the Jerky:

  • Preheat your oven to 175°F (80°C) or set your dehydrator according to manufacturer instructions.
  • Line a baking sheet with aluminum foil and place a wire rack on top.
  • Lay the marinated beef slices in a single layer on the rack, ensuring they're not touching.

5- Dry the Meat:

  • Bake in the oven or dehydrate for 4-6 hours, turning the pieces occasionally, until the jerky is dry and firm.
  • Check the texture; the jerky should be chewy but not brittle.

6- Cool and Store:

  • Once cooked, allow the jerky to cool to room temperature.
  • Store in airtight containers or vacuum-sealed bags for prolonged freshness.
