Zucchini, cucumber, and eggs are three classic ingredients in my kitchen. I use them very often in all kinds of dishes. Today I felt like making a delicious salad, so I combined them to satisfy my cravings. I started making salads with raw zucchini about six years ago. At first, I chopped the zucchini very finely. Although its flavor is mild, I wasn't used to eating it raw. Now I eat it raw, cut into thin slices, diced, or simply grated. I love eating it in all its forms.

This is a fresh salad with easy-to-find ingredients. The best thing about it is the texture of each ingredient. I really enjoy it. The crunchy cucumber in every bite is fascinating. You also need to choose a good dressing with an intense flavor. I say this because this salad is made with ingredients that have mild flavors. I made an easy dressing with chives and vinegar. I made this meal for my dinner. If you're not a big eater, it will also serve you well and you'll be satisfied, although you can always add more ingredients to enhance this salad.

INGREDIENTS FOR ONE PERSON - Half a raw zucchini - Half a cucumber - Two hard-boiled eggs - Chive dressing - Sesame seeds - Chives.

This salad can be made in several ways; it all depends on how you choose to cut the ingredients. On this occasion, I cut all the ingredients into cubes.

If the zucchini skin is in good condition, you can leave it on and eat it, as long as you have washed it thoroughly. The same goes for cucumber. I usually leave 40% of the skin on these vegetables, but if you don't like eating the skin, there's no problem with removing it completely and continuing to make the salad. Remove the seeds from the cucumber, and in the case of the zucchini, leave the seeds only if they are tender.

The eggs will be perfect if you cook them for ten minutes in boiling water. Once they have cooled, remove the shells and cut the cooked eggs into cubes so that they look the same as the cucumber and zucchini.

This chive dressing is delicious. I made it with one tablespoon of olive oil, one teaspoon of sesame oil, one tablespoon of apple cider vinegar, black pepper, the white part of the chives, and salt. Mix the zucchini, cucumber, eggs, and dressing well. You can add a creamy ingredient if you like, but as I show you here, it's perfect.

To finish, add sesame seeds and chopped chives. It's a tasty, light, and healthy salad.

Ensalada de calabacín y pepino

Calabacín, pepino y huevos, estos son tres clásicos ingredientes en mi cocina, los utilizo muy a menudo en todo tipo de preparaciones, hoy se me apetecía hacer una deliciosa ensalada y los he combinado para satisfacer mis antojos, las ensaladas con calabacín crudo las comencé hacer aproximadamente hace seis años, al principio picaba el calabacín muy finamente, aunque su sabor es suave yo no estaba acostumbrada a comerlo crudo, ahora ya lo consumo crudo cortado en finas láminas, también cortado crudo en cubos o simplemente rallado, ahora me encanta comerlo en todas sus presentaciones.

Esta es una ensalada fresca con ingredientes fáciles de conseguir, lo mejor es la textura de cada uno, lo disfruto mucho la verdad, el pepino crujiente en cada bocado es fascinante, además también es necesario que elijas un buen aderezo con sabor intenso, lo digo porque esta ensalada está elaborada prácticamente con ingredientes de sabores suaves, yo hice un aderezo fácil de cebollino bien avinagrado, esta comida la elabore para mi cena, si no eres muy glotón tambien te servira y quedaras satisfecho, aunque siempre puedes agregar más ingredientes que le aporten cosas buenas a esta ensalada.

INGREDIENTES PARA UNA PERSONA - Medio Calabacín crudo - Medio Pepino - Dos Huevos cocidos - Aderezo de cebollino - Semillas de sésamo - Cebollino

Se puede hacer de varias formas esta ensalada, todo está en la forma que elijas de cortar los ingredientes, yo en esta ocasión corte todos ingredientes en forma de cubos.

Si la piel del calabacín está en buen estado, puede dejarla y consumirla, siempre que lo haya pasado por una buena limpieza, lo mismo sucede con el pepino, generalmente yo le dejo un 40% de piel a estos vegetales, en dado caso no te guste consumir su piel, no hay problema en retirarla por completo y seguir haciendo la ensalada. Las semillas del pepino las retiramos, y en el caso del calabacín las semillas se quedarán solo si estas están tiernas.

Los huevos quedarán perfectos si los cocinas durante diez minutos en agua hirviendo, una vez se hayan enfriado le retiras la cáscara, y corta los huevos cocidos en cubos, de manera que se luzca igual que el pepino y el calabacín.

Este aderezo de cebollino es delicioso, lo hice con: una cucharada de aceite de oliva, una cucharadita de aceite de sésamo (ajonjolí), una cucharada de vinagre de manzana, pimienta negra, parte blanca del cebollino y sal. Mezclar el calabacín, pepino , huevos y aderezo muy bien, puedes añadir algún ingrediente cremoso si gustas, pero así como te lo muestro aca queda perfecta.

Para finalizar se le coloca semillas de sésamo y cebollino picado, es una ensalada sabrosa, ligera y saludable.
