Ingredients

🌾 2 tablespoons wheat flour

Instructions

1- Prepare the Stuffing:

  • Combine diced smoked bacon, onion, red bell pepper, and grated pickled cucumbers in a bowl.
  • Season with black pepper, granulated garlic, and marjoram. Add mustard and mix thoroughly.

2- Prepare the Beef:

  • Slice beef into 1 cm thick cutlets.
  • Pound each cutlet thin between plastic wrap using a meat mallet.
  • Season with salt and pepper on one side.

3- Assemble the Roulades:

  • Place stuffing on one end of each cutlet.
  • Roll the meat over the stuffing, tucking in sides, and secure with toothpicks.

4- Sear the Roulades:

  • Coat roulades in flour. Heat oil in a non-stick frying pan.
  • Sear each roulade until browned, 2-3 minutes per side. Remove from pan.

5- Prepare the Sauce:

  • In the same pan, melt butter. Add carrot, onion, and celery; sauté for 4-5 minutes.
  • Add garlic, tomato paste, bay leaves, allspice, and pepper; cook for 2-3 minutes.
  • Add thyme and broth; bring to a boil, scraping up browned bits.

6- Stew the Roulades:

  • Return roulades to the pan; cover with lid slightly ajar. Simmer on low for 60 minutes.
  • Uncover, and simmer for 20-30 minutes until sauce thickens. Remove toothpicks before serving.
