Lauki Muthia
Lauki Muthia is a famous Gujarati snack recipe. It has a very spicy taste and is loved by both children and adults.
Ingredients:
- Grated Bottle Gourd - 1.5 cups
- Wheat Flour - 1/2 cup
- Gram Flour (Besan) - 1/2 cup
- Semolina - 1/2 cup
- Green Chilies - 7-8
- Ginger - 1-inch piece
- Finely chopped Coriander Leaves
- Oil - 1 tablespoon
- Red Chili Powder - 2 teaspoons
- Salt - 1 teaspoon
- Turmeric Powder - 1/4 teaspoon
- Coriander Powder - 2 teaspoons
- Cumin Seeds - 1 teaspoon
- Mustard Seeds - 1 teaspoon
- Sesame Seeds - 1 teaspoon
- Curry Leaves - 8-10
- Chili Flakes - 1 teaspoon
- Lemon Juice - from 1 lemon
- Sugar - 2 teaspoons
- Baking Powder - 1 teaspoon
- Asafoetida - a pinch
Method:
To make Lauki Muthia, in a bowl, add 1/2 cup wheat flour

, 1/2 cup gram flour

and 1/2 cup semolina

and grated bottle gourd.

Peel and grate it.

Mix it.

Now add green chili and ginger

paste and

all the dry spices

(salt, red chili powder, turmeric powder, coriander powder, cumin, sugar, chili flakes, baking powder, asafoetida) and

mix it. Now add the juice of one lemon.

Add 2 teaspoons of oil and mix well to knead the dough.

Now cover it and let it rest for 15-20 minutes.
The muthiyas need to be steamed, so
add 2 glasses of water to the steamer and heat it.

And grease the sieve with oil.

So that the muthiyas don't stick. Now, take small portions of the mixture, roll them into shapes, and

place them on the sieve.

Now cover with a lid.

Let it cook for 20-25 minutes. After 25 minutes, the muthia is ready.

Turn off the gas and let the muthia cool down. Now cut it into 1-inch pieces.

Now, to fry the muthia, heat oil in a pan and add mustard seeds, sesame seeds, and curry leaves, and let them splutter.

Then add the cut muthia pieces and cook, flipping them occasionally, until crispy.

Now turn off the gas and garnish with coriander leaves.

Serve and enjoy the bottle gourd muthia hot with green chutney and tomato sauce.
