Ingredients
๐ 1 whole chicken, cut into pieces, preferably organic or free-range

๐ฟ 1 bunch of fresh cilantro

๐ง 4 cloves garlic, minced

1 large onion, chopped

2 tomatoes, diced
๐ง 1 tablespoon salt
๐ฟ 1 teaspoon black pepper
๐ฑ 1 teaspoon mild curry powder
๐ฝ 1 cup frozen peas
๐ฑ 2 tablespoons olive oil
๐ Juice of 1 lemon
Instructions
1- Preparation:
- Marinate the chicken pieces with lemon juice, half the garlic, salt, and pepper. Let it rest for 30 minutes to absorb the flavors.
2- Cooking the Chicken:
- In a large pan or "caldeirรฃo" (preferably Tramontina), heat the olive oil over medium heat. Add the marinated chicken pieces and cook until they gain a golden-brown color on all sides. Remove the chicken and set aside.
3- Sautรฉing the Vegetables:
- In the same pan, add the chopped onions, remaining garlic, red bell pepper, and tomatoes. Sautรฉ until the onions become translucent and the tomatoes have broken down.
4- Rice Preparation:
- Add the rice to the pan and stir to combine with the sautรฉed vegetables. Toast the rice slightly for about 2 minutes for added flavor.
5- Combining Ingredients:
- Return the chicken to the pan. Add 4 cups of water or enough to cover the ingredients. Sprinkle the curry powder evenly.
6- Simmering:
- Reduce heat to low, cover, and simmer until the rice absorbs the liquid and the chicken is fully cooked, approximately 25 minutes. Add the peas during the last 10 minutes of cooking.
7- Finishing Touch:
- Once cooked, fluff the rice with a fork. Add chopped cilantro and parsley, stirring gently to incorporate the fresh herbs.
8- Serve:
- Serve hot, making sure each portion has a generous amount of chicken and rice.
