Mulitas de Carne Asada is a delectable Mexican delicacy from Nayarit. These savory treats consist of two thick corn tortillas brimming with succulent grilled beef and gooey Oaxaca cheese. Served with a spicy red salsa and creamy guacamole, they make for an irresistible snack or meal.
Ingredients
🌽 200-300g Nixtamalized corn flour, Maseca brand
🥩 2 ribeye beef steaks
🧀 200g shredded Oaxaca cheese
🧂 Salt
🌶️ Pepper
🍅 2 red tomatoes
🧅 1 small slice of onion
🧄 1 garlic clove
🌿 1 pinch cumin
🌶️ 5-7 chile de árbol
💧 2 ladlefuls water
🥑 2 avocados
🍅 1/2-1 diced red tomato
🌶️ 1/4-1/2 diced green chili
🧅 1/4-1/2 diced onion
Instructions
1- Prepare the Red Salsa:
- In an earthenware pot, combine 2 tomatoes, a slice of onion, and chile de árbol. Add water and bring to a boil. Cook for 5 minutes.
- Transfer boiled ingredients to a blender. Add a garlic clove, a pinch of cumin, and salt. Include 2 ladlefuls of boiling water. Blend until smooth.
2- Cook and Chop the Carne Asada:
- Season steaks with salt and pepper. Heat grill pan over medium-high heat using a gas stovetop.
- Grill steaks until browned on both sides, cooking to your preferred doneness. Let rest, then chop into bite-sized pieces.
3- Prepare the Guacamole:
- Mash avocados in a bowl with a fork. Add diced tomato, chili, onion, and salt. Mix well.
4- Make the Tortillas:
- Shape corn masa into small balls. Place between plastic sheets in a tortilla press, forming thick rounds.
- Heat a dry comal or griddle on medium. Cook tortillas until golden-brown spots form, flipping as needed.
5- Assemble and Cook the Mulitas:
- Place a tortilla on the griddle, sprinkle generously with Oaxaca cheese, add carne asada, then more cheese. Top with another tortilla.
- Cook on the griddle, flipping until cheese is melted.
6- Serve:
- Cut mulitas in half, top one side with salsa, the other with guacamole. Serve hot.
