Cochinita pibil is a traditional Mexican dish from the Yucatán Peninsula. It's made by marinating pork in achiote (annatto paste), orange juice, and spices, then wrapping it in banana leaves and slow-roasting it — traditionally underground, in a pit called a "pib,” which is where the name pibil comes from.

The result? Incredibly tender, flavorful meat with a smoky, citrusy taste.

It’s often served with pickled red onions and warm tortillas — and it’s a true celebration of Mayan culinary roots.

If you ever visit southern Mexico… don’t leave without trying it!
