Instructions

1- Prepare the Beef Filling:

  • Add the leftover shredded beef to the skillet, mixing well with the onion and jalapeño. Cook for 4-5 minutes, stirring occasionally, until the mixture is heated through. Add salt to taste, then remove from heat.

2- Prepare the Tacos:

  • Heat a separate large skillet over medium-high heat. Add 1 tablespoon of olive oil.
  • Place one tortilla in the skillet, add a spoonful of the beef mixture to one half of the tortilla, and top with a sprinkle of cheese.
  • Fold the tortilla over, pressing gently with a spatula to close. Repeat with remaining tortillas.

3- Fry the Tacos:
