Instructions
1- Heat Water:
- Use the Fellow Stagg EKG Electric Kettle to heat a full kettle of water to between 205-210°F.
2- Prepare Chemex:
- Place a Chemex Bonded Filter into the Chemex, ensuring the tri-fold portion faces the pouring spout to avoid clogging.
- Rinse the filter thoroughly with hot water to remove any papery taste and to preheat the Chemex carafe, then pour out the rinse water.
3- Grind Coffee:
- Grind 50 grams of Blue Bottle coffee with the Fellow Ode Brew Grinder to a medium-coarse consistency, similar to sea salt.
4- Prep and Tare Scale:
- Add the ground coffee to the Chemex, leveling it with a gentle shake.
- Place the Chemex on the Acaia Pearl S Scale and tare it to zero.
5- First Pour (Bloom):
- Start the timer and begin the bloom pour by saturating the coffee grounds with 100 grams of water.
- Pour in a spiral pattern from the center outward. Allow blooming to proceed for 45 seconds.
6- Second Pour:
- At the 45-second mark, add water in a circular pattern, avoiding the filter, until the scale reads 300 grams of water.
7- Third Pour:
- At 1 minute 50 seconds, continue pouring in the same pattern until you reach 500 grams of water. Allow the water to filter through before the next pour.
8- Fourth Pour:
- At 3 minutes 10 seconds, perform the final pour to reach a total of 700 grams of water.
9- Finish Brewing:
- Let the brewing complete, typically taking 4 minutes, but it can extend up to 7 minutes for lighter roasts.
- Once filtering ends, remove and discard the filter.
10- Serve:
- Pour the freshly brewed coffee into a clear glass mug and enjoy.
